Today we venture beyond Puglia to discover one of Italy’s most extraordinary destinations: Matera, a city unlike any other.
Carved into limestone cliffs and steeped in thousands of years of history, Matera is renowned for its ancient cave dwellings, known as the Sassi, and is recognized as a UNESCO World Heritage Site. As we arrive, you’ll immediately feel the magic of this timeless place, where past and present blend seamlessly.
We’ll begin with a guided walking tour through the labyrinth of stone pathways, staircases, and hidden corners that make Matera so captivating. Along the way, you’ll step inside centuries-old cave homes and churches, gaining insight into the lives once lived within these remarkable spaces and the city’s fascinating transformation over time.

Today, we set out on a flavorful journey into the world of one of Puglia’s most treasured traditions: organic extra virgin olive oil.
Our experience begins at a beautiful historic masseria, where we’ll discover the art and science behind this prized “liquid gold”—from careful cultivation and production to proper preservation and use. During our guided visit, we’ll explore the estate’s ancient underground mill and wander through a breathtaking grove of centuries-old olive trees, each with its own story to tell.
We’ll then take part in a curated tasting of distinct organic extra virgin olive oils, led by an expert olive oil sommelier. As you learn to taste the subtle differences in aroma, flavor, and quality, you’ll gain a deeper appreciation for this essential element of Puglian cuisine.
Following our tasting, we’ll sit down to a leisurely lunch set in a picturesque countryside setting, where the flavors of the region continue to shine.

Surrounded by the colors and scents of rural Puglia, we’ll be warmly welcomed into a world where tradition and daily life unfold at a gentle pace. Here, you’ll meet the farm’s beloved animals—cows, sheep, goats, and their playful young—and discover the simple yet beautiful story that begins with fresh milk and ends in some of the region’s most cherished cheeses. You’ll have the chance to get up close, feed them, and share in these authentic, heartwarming moments.
Our experience continues at the masseria’s bottega, a true feast for the senses. Displayed before you is a vibrant array of artisanal cheeses, each with its own unique character, flavor, and form. This is followed by a leisurely, abundant lunch featuring organic cheeses and dairy products made right on site, accompanied by traditional Salento frise, seasonal vegetables, aubergines preserved in oil, and other local specialties that celebrate the richness of the land.
In the afternoon, we’ll make our way to the charming seaside town of Gallipoli. With its ancient Greek roots and unmistakable Mediterranean allure, the old town sits gracefully on an island, connected to the mainland by a historic bridge. As we wander through its maze of narrow alleys and sunlit streets, you’ll be captivated by sweeping sea views, whitewashed buildings, and endless photo-worthy corners in this truly enchanting coastal gem.
Today we visit the charming hilltop village of Cisternino, one of Puglia’s most picturesque and authentic towns. With its whitewashed houses, flower-filled balconies, and winding cobblestone lanes, Cisternino invites you to slow down and savor its timeless atmosphere. As we wander through its historic center, you’ll discover hidden corners and panoramic views that capture the essence of southern Italy. We’ll then sit down to a relaxed lunch at a local trattoria, where you’ll enjoy regional specialties in true Puglian style—simple, flavorful dishes that celebrate the land and its traditions. It’s a perfect blend of beauty, culture, and cuisine in one unforgettable setting.
We will return to Lecce after lunch, giving you time to shop for the last few souvenirs and pack, before meeting to enjoy a final celebration dinner.
