Evening view of the Colosseum
Day 1 Afternoon: Arrive and settle in your four-star accommodations at Hotel Nazionale. The hotel is located in Piazza Navona. Just 1/3 of a mile from the Pantheon and the Trevi Fountain. Settle in and unpack for the week. We will ward off jet-lag with a walking tour and get to know our surroundings and neighborhood where we will be spending the week.
Evening: In the evening we will meet for our welcome dinner. Regional cuisine will await us as we have our first taste of Roman deliciousness.
Let's grab our aprons, time for our first cooking lesson!
Day 2 Morning: After enjoying breakfast at the hotel, we will head off to our first private cooking class. This class will introduce us to dishes typical of Cucina Romana and recipes might include the famous carbonara or amatriciana, as well as dishes using typical Roman ingredients such as artichokes. After our lesson, we will enjoy our efforts for lunch.
Afternoon: The afternoon will include a private city walking tour of the piazzas and churches. We will visit sights such as the famous Trevi Fountain, Colosseum, Piazza Navona and the Spanish Steps.
Evening: Evening and dinner will be on your own leisure.
A specialty shop in Rome and our very talented Roman tour leader.
Day 3 Morning: Today, you'll have the morning to yourself to "roam" as you please. Consider walking to the Vatican, sight-see at your own leisure or enjoy Italy's "Il Dolce Far Niente." Sit back at the cafes and people-watch like a local.
Afternoon & Evening: This afternoon, we're in for a treat! Get ready to head out to the streets of Rome for a Food Lovers Walking Tour. For three hours, we will visit small, family owned shops located in the center of the city as well as shops located off the beaten path. The opportunity will present itself not only to sample their bountiful products but also gain invaluable knowledge from the owners. Products might include cured meats, coffee, chocolate, breads and pizzas. A visit to a cheese shop with tasting will also be included on our tour.

Day 4 Morning: As it's Sunday morning, today you will have the opportunity to watch Rome's calmer side. Take a walk to local churches or perhaps visit the Colossuem. We will reconvene for a light lunch at a local trattoria.
Evening: In the early evening, we head back to the kitchen for our second culinary class of Rome's version of Sweet and Savory. Our cooking class today will focus on savory tarts made with seasonal Italian specialties such as vegetables and cheeses all held together by a super flaky crust. Our sweet tarts will be filled with fresh fruits, jams or spreads. Enjoy all of our efforts in a joyful dinner.
Local cheeses and honey
Day 5 Morning: Today, we head outside Rome and indulge in an exclusive and off-the-beaten path excursion to the Tuscia region of Lazio. After breakfast at the hotel, we will be picked up and taken to an organic cheese and honey farm for a memorable visit in the countryside. We will meet the farm owners, learn their traditional farming methods and watch a live-cheesemaking demonstration. All while enjoying samples of cheese made right in front of your eyes.
Afternoon:Lunch will be provided on the farm, freshly prepared by the owners themselves. Wine will accompany our meal and if desired, you may also visit the beehives, after changing into proper gear. A truly authentic experience awaits us today!
Evening: Dinner, if needed after our excursion, will be on your own this evening.
Our talented sommeliers doing some "research."
Day 6 Morning: Today we head out of the city again as we head towards Lazio's Wine Region, just about one hour away from the city center. We will visit the vineyards and learn all about the winemaking process directly from the winemakers. A walk through the vineyards with samples will be provided.
Afternoon: Lunch will be enjoyed directly on the vineyard and a wine-tasting lesson will be led by a certified sommelier. Our meal will be seasonal, fresh and complete with dessert and espresso or grappa.
Evening: We arrive back in the city around 5:00PM and the evening will be at your own leisure.
Selecting the freshest produce
Day 7 Morning & Afternoon: Today, we head back to the kitchen for our final cooking class. Our lesson will focus on fresh vegetables and we will plan the menu after a visit to the market with our personal chef. Depending on what we find and what is freshest and in season, we might prepare eggplant parmigiana, spaghetti alla puttanesca and a plate of fried vegetables. The meal would be incomplete without dessert, so one will also be prepared, to be enjoyed with espresso. A group lunch will end the experience.
Evening: In the evening, we will reconvene for our farewell dinner. Time will permit to share stories of the week, exchange e-mail addresses with your new friends and discuss the favorite aspects of the week.
